The world population explosion really got momentum with the introduction of refrigeration and particularly refrigerated rail cars in the 1870’s and 1880’s. Residential refrigeration was a few generations later in the 1920’s, but the ability of society to move and preserve serious amounts of foodstuffs was already fully in gear. Cars move us and telephones connect us, but refrigeration maintains us! Our desire is to be free, independent and liberated, but it seems we tend to forget just how dependent we are on the developments of the industrial revolution which are allowing us to persevere and flourish! I don’t know about you, but every time I turn on a water faucet or open our refrigerator door I’m thankful for what humanity has created for us to live rich and fulfilling lives!
